I think you guys like it when I post recipes. When I share the links to some of the great ones I have found or share ones on FaceBook I get a really positive response.  I think we are all a little hesitant to try something new without having a firsthand account of how it’s going to turn out. I know I’ve followed a few recipes that in theory sounded good but in reality didn’t live up to their potential.

Finding ones that are practical is even more challenging. I know I don’t have as much time to cook as I used to. I wish I had more time because I really love to cook, but the fact is I need to get a healthy dinner on the table with little time to spare most nights.

One of my favorite places to get quick and delicious meals is Clean Eating Magazine

since the very beginning. I have every issue they have published and, I must say, as time goes on they have gotten nothing but better.

Don’t get me wrong, there are some time consuming recipes that I can make on the rare occasion that I have some time to spare.  But there are also an equal number of quick easy to prepare dishes. They’ve also had features on budget menus, leftovers, prep and freeze meals and crock pot cooking.  A great bonus, for those new to clean eating, is a 14 day meal plan in every issue, complete with grocery list and recipes.

Another plus for those new on this journey is the outline in every issue of what clean eating is all about.  It outlines what the philosophy is so that you can use it as a guide to make choices in recipes, at the grocery store or when dining on the go.  It shows how it’s not a diet, but a way of living.

I want to share with you my love of Clean Eating Magazine. Recently they put out a bookazine (bigger than a magazine, smaller than a book) of Quick and Easy Recipes.  Some of my favorites that are included are:

  • Mini Sloppy Janes (modified for a vegetarian like me!)
  • Lean Tofu Pad Thai
  • Coconut Cardamom Sweet Potatoes

Sound tasty? Ready to win a copy of the Clean Eating Quick and Easy Meals bookazine? Post a comment below telling me what your go to quick and healthy meal is.  One entry per person (although you can post as often as you like).  All posts must be posted by 10 pm CST on Monday October 25th.  Only open to U.S residents (sorry but international postage is a killer). Winner will be drawn at random and notified via a post to this blog entry as well as email.

If you don’t already know, my quick and healthy favorite is my Spinach Egg White Omelet. What’s yours?
