I had a request from some Facebook friends recently, something I should have thought of myself but for some reason did not.

I often mention my food in my status updates on Facebook. I do not know why, maybe because I am always eating.  I had a request recently to share the recipes for what’s cooking at my house.  Talk about a “Duh” moment. Of course I should be sharing with you what I eat. What a great way to show you that eating healthy does not have to be crazy or complicated.

I thought today I would start by sharing with you my go to lunch. I often talk about eating leftovers, which I and my husband do most of the time. Sometimes, though, we run out. Or we might have only one serving left, so I let my husband take it. He actually works in an office, unlike me who works at home. So it is easier for me to cook something than it is for him. So some days he gets the last meal and I get to whip something up for lunch.

My spinach egg white omelet is my standby and saving grace. If there is no time and nothing left from last night’s meal, I always have the ingredients for this omelet. It’s quick, easy and filling. I pair it with a slice of Ezekiel bread toast, natural peanut butter and a piece of fruit. Perfect lunch! Or breakfast too!

Spinach Egg White Omelet

  • 3 egg whites (or liquid egg white equivalent)
  • 1/8 tsp turmeric
  • 1 cup chopped baby spinach
  • 1 wedge Laughing Cow Cheese Light Original Swiss
  • Olive oil spray
  • Pepper and salt, to taste

1. Heat a non stick skillet on medium high heat.  Spray lightly with olive oil.

2. Beat eggs and turmeric together. Pour into hot skillet. When eggs start to set top with spinach and the Laughing Cow Cheese (cut into small pieces).  Season with salt and pepper, if desired.

3. Fold over and cook until eggs are completely cooked through. Serve.

 It is simple, but it is tasty! Try it out and let me know what you think.
